Our Favourite Vegan Chocolate Truffles Recipe!

Our Naturopaths love these delicious treats as they are really easy to make + will give you your chocolate fix over the Easter period.

Ingredients:

1 cup raw almonds
1 cup raw hazelnuts
1 Tbsp raw organic cacao powder
10 dates, pitted (if dried out, soak in warm water for 10 minutes then drain)
1 1/4 cups loving earth dark chocolate, roughly chopped
1 tsp coconut oil

Topping:
1/4 cup of your favourite crushed nuts

Directions:
+ Place almonds and hazelnuts in a food processor and process until it reaches the consistency of a meal. Remove and set aside in a dish.

+ Next, place pitted dates in the food processor and process until small bits remain and/or it forms into a ball.

+ Then add in the raw organic cacoa powder and 1/2 of the nut meal and pulse. Continue pulsing and adding the nut meal a little at a time until a loose dough is formed.

+ Once you have a dough that's easy to form into balls, scoop out 1 Tablespoon amounts and roll/carefully form into balls. Set on baking paper and place in freezer to chill .

+ Now melt chocolate in microwave for 30 second increments. Be careful not to overheat. Once melted, stir in coconut oil to help the chocolate thin and ease the dipping process.

+ Remove truffles from freezer and, one at a time, dip them into the melted chocolate. Transfer back onto baking paper and top with your favourite crushed nuts.

+ Let them set at room temperature and store leftovers in an airtight container at room temperature. Transfer to freezer for longer term storage.
